I’d happily eat a Japanese sweet potato daily without ever getting bored of it. What’s my favorite way to consume it? Bake them whole in the oven for nearly an hour until they’re caramelized and extremely tender. When I spotted Beni Bites Japanese sweet potato bars at Pop Up Grocer during a recent snack run, I knew I had to give them a try.
